Super Food Breakfast Hash--Recipe
This week Instagram followers voted for the recipe and cooking video that they'd like to see. This breakfast hash won!
You know when you want a delicious breakfast, but you really just wish someone else would cook it for you? Yeah that's me everyday. This super easy breakfast hash did the trick, though! It was quite delish.
So let's cut to the chase. I didn't have all of the ingredients on hand, and ended up liberalizing a fair amount. But that's totally acceptable. In fact, I highly encourage my clients to do as well! I help moms feel confident making swaps that fit their budget, meet family preferences, and sometimes simply incorporate whatever foods they have on hand!
I'd like to say #coronavirus was the main contributor to my swaps, but nah. I wasn't going to go to the grocery store on a Saturday anyway. So here's my modifications...
-Instead of chicken I used frozen meats that were on-hand. I cut a spicy chicken patty and 2 breakfast sausage patties. I also added in some scrambled eggs.
-I threw in a bag of frozen sweet potato, as well
